Our sweet beginning
The story behind Cheeses n' Jesus Cheesecake Co.

Hello everyone and welcome! Peace be with you! My name is Nick Rahe. I am the owner/operator of the Cheeses n’ Jesus Cheesecake Co. It is great to have you here!
So, a little about the Cheeses n’ Jesus Cheesecake Co. I’m not really one to talk about myself, but I don’t think people can understand the true essence of the Cheeses n’ Jesus Cheesecake Co. without mentioning a bit about myself. So here it goes. I am a devout Catholic. Together with my wife, Melissa, I lead a very active faith life and strive to live my life based on the teachings of my best friend and Savior, Jesus Christ! My faith is the most important thing in my life and, without it, I would be lost!
My journey to starting the Cheeses n’ Jesus Cheesecake Co. entails much striving for personal glory and, unfortunately, letting the world and sin dictate the direction of my
life. So, I have held several jobs in the past. With each passing job, the goal was never to come closer to God. It was always to either make more money (greed), earn a better title (pride), or try to keep up with my neighbors’ success (envy). However, with each position, I was never able to find lasting joy or fulfillment. So, as I became burnt out or unfulfilled with each position, I would search and apply for another position thinking that was the key to my joy and fulfillment. Each time I started a new job, I would pray to God asking for success in the position. God, of course, can make anything happen and would often give me the success I was seeking albeit on a short-term basis. I would soon become burnt out and unfulfilled yet again. Little did I know, that through each of these positions, God was molding me into the man He was calling me to be.
After many years of this bouncing from one position to another seeking joy but never
finding it, I had finally had enough. I quit my previous job not knowing what I would do next. I had exhausted all of my possibilities. I was at wits end. Not knowing where else to turn, I went to the first place that came to my mind: the foot of the Cross. I wept bitterly and just laid it all out for God. (Humility). I felt a true peace that I hadn’t felt in years!
Now through all of these years, my faith life had always been strong. I attended Mass regularly, prayed the Rosary daily often multiple times a day, went on Catholic retreats, etc. However, I was not taking advantage of all of the fruits that the Catholic Church offers. One such fruit that I rarely took advantage of was Adoration in front of the Blessed Sacrament. After my moment at the foot of the Cross, I didn’t want the peace that I experienced to end. It was then that I began to go to Adoration on a daily basis. Instead of me dictating to God what I needed help with, I just simply sat in His presence, quieted my heart and mind, and just listened to what God was telling me.
It was in these moments that I heard God beginning to provide me with the directions for the “next right step” in my life: starting a cheesecake business. Now before we go any further, I should just tell you that although I LOVE cheesecake, I hate to cook. This idea of me starting my own cheesecake business was so far from everything I had ever done in my life. It was totally out of left field. I had never even made a cheesecake!! (However, full disclosure, even though I hate to cook, I have found that I love to make cheesecakes. I am on fire for it!) With each passing day in Adoration, I heard God providing direction on the “next right step.” Whether it was the name of the company, the logo, how much to charge, etc., I took it all to Adoration and asked God what I should do. Sometimes I heard God speaking to me, other times not. I just took that as a message of “not yet.” Regardless if I heard God in Adoration or not, my time there was always fruitful. After a while, I struck up the gumption to finally begin making cheesecakes. Thanks be to God; I found some recipes online and found that baking cheesecakes wasn’t as daunting as I had previously envisioned. I found I truly enjoyed baking cheesecakes. I began making them consistently, providing samples to friends and family. Lo and behold, the feedback was overwhelmingly positive. God is so good!!
So, after much continued time in Adoration and prayer, I decided to take the plunge and
form the Cheeses n’ Jesus Cheesecake Co. However, this wasn’t going to be just any normal dessert or cheesecake company. Because God played such an important role in the formation of myself and the company, I wanted to give glory to God with each cheesecake I created. Thus, with each cheesecake I produce, I put an image of something from our faith that, hopefully, leads others closer to God. It is my small way of glorifying God in my own little corner of the world!
